Coating.
1 egg white.
1 cup almond flakes (about 80 g).

Ingredients.
• 200g (2 cups) shelled pistachios (unsalted).
• 100g (1/2 cup) powdered sugar.
• 1 large egg white (room temperature).
1/2 tsp vanilla extract (optional).
White chocolate (for the drizzle).
Freeze-dried raspberries (for sprinkling at the end).
Instructions:
1.Blitz pistachios in a food processor until it forms a fine meal. Add the powdered sugar and mix well.
2. Whisk the egg white and vanilla until frothy, then fold in the pistachio mixture until a dough forms.
3. Roll into small balls and place on a baking tray.
4. Bake at 170°C (340°F) for 10-12 minutes. Let them cool completely!
5. Melt your white chocolate, drizzle it over the cookies, and finish with a freeze-dried raspberries.
