For the matcha pastry cream:
500 ml whole milk
5 large egg yolks
100 g granulated sugar
50 g corn starch
1 tbsp pure vanilla extract
2 tbsp Matcha powder
+ 200 ml heavy whipping cream
For the matcha crepes:
275 g all-purpose flour
75 g cornstarch
6 large eggs
3 tbsp granulated sugar
675 ml whole milk
75 g melted butter
3 tbsp Matcha powder
+ whipped cream and more matcha powder for decorating
